still cooking!


Ingredients

  • 2 1/2 cups chopped cooked chicken breast (about 1 pound)
  • 1/2 cup matchstick-cut carrots
  • 1/3 cup sliced almonds, toasted (I omitted)
  • 1/3 cup light mayonnaise
  • 1/4 cup finely chopped green onions
  • 1/4 cup plain fat-free yogurt
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (8-ounce) can crushed pineapple in juice, drained
  • 4 (6-inch) whole wheat pitas, each cut in half (Used wheat tortilla instead)
  • 8 Romaine lettuce leaves (Used lettuce)

Preparation

Combine first 11 ingredients in a large bowl, stirring well. Line each pita half with 1 lettuce leaf; fill each half with 1/3 cup chicken mixture.



This meal was so delicious! Pretty easy to make and absolutely wonderful!

My first week of dieting rocked, I lost 5 lbs! I'm sure it was because I quit drinking Dr Pepper and drinking beer, but whatever the reason is I'll take it! Unfortunately this holiday weekend is making things hard to stick on track but I'm doing what I can! Sorry there were a few too many beers had last night, however I only gained 6oz back so I won't complain too much. And when hubs headed to McD's for lunch today I opted to make the above salad instead of eat the greasy burger - GO ME!!!!

We had a fantabulous day today, lots of pics to come about that later this weekend. Hope everyone is enjoying themselves!

That sounds like a good recipe. Will have to try it. Don't know if you remember me commenting that cutting out soft drinks and drinking water helped me lose last year! :) 5 lbs is great! Way to go! I'm more of a wine person, but my friends trying to maintain their weight all drink Michelob Ultra. 100 calories a beer.
