Tasty Tuesday

Green Chili

1 jar (16oz) salsa verde (it's the green salsa, fyi)
2 lb chicken thighs, cut into 1/2 inch pieces
1 can (15oz) corn, drained
1 can (15.5 oz) cannellini beans, rinsed
2 cubanelle peppers, chopped (I omitted this because I couldn't find it!)
1 med onion, chopped
1 TBSP minced garlic
2 tsp ground cumin
1/2 tsp salt
1/2 c chopped cilantro

1. Mix all ingredients except cilantro in a 3 1/2 qt or larger slow cooker

2. cover & cook on high 5-6 hrs or on low 8-9 hrs until chicken is cooked through

3. stir in cilantro, serve with lime and sour cream (I had none of these items and it still tasted fine)


Makes 6 servings

While this photo does not do the meal any justice, it was absolutely delicious! I have a husband who things that substituting beef with chicken is a sin, so he was very skeptical about a chili that had corn and chicken in it.... but he loves it!
