Alright, beginning of this blog is last nights dinner:
Bruschetta 'n Cheese-Stuffed Chicken

1 can (14-1/2 oz.) Italian-style diced tomatoes, undrained
1-1/4 cups KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese, divided
1/4 cup chopped fresh basil
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
8 small boneless skinless chicken breast halves (2 lb.)
1/3 cup KRAFT Roasted Red Pepper Italian with Parmesan Dressing

HEAT oven to 350ºF.

MIX tomatoes, 1/2 cup cheese and basil in medium bowl. Add stuffing mix; stir just until moistened.

PLACE 2 chicken breasts in large freezer-weight resealable plastic bag. Pound with meat mallet or side of heavy can until chicken is 1/4 inch thick. Remove from bag; place, top-sides down, on cutting board. Repeat with remaining chicken. Spread chicken with stuffing mixture. Starting at 1 narrow end, tightly roll up each breast. Place, seam-sides down, in 13x9-inch baking dish. Drizzle with dressing.

BAKE 40 min. or until chicken is done (165°F). Sprinkle with remaining cheese; bake 5 min. or until melted.



I had extra stuffing so I just sprinkled it over the top which worked well!


we got too hungry so we had to eat before I could take the final picture! lol

Alright, small update on life....

Tuesday: We had our first soccer practice which was just filled with irony. For those who don't know what I'm talking about, refer to my past blog titled "the smallest big town ever". (Jennifer I tried to take your directions but I must be an idiot cause it isn't working!) I got there with our 5yr old before most other parents. So I was standing down on the field watching them warm up, I turned around and saw my husband walking down the hill followed shortly by his ex & her mother. So the day was pretty cold, actually it was about 50 degrees but the wind was horrible so it felt more like 30. Hubby and I (along with all the other parents) opted to sit in our heated car and watch practice from there. So Hubs and I are chilling in my car with the baby with us, there is a car parked facing us but no one in it. That is of course until his ex & her mother get into the car. So needless to say, we're sitting in our cars staring straight at each other - talk about awkward! So, the irony continues. There are 12 kids on this team, 5 of which were on the team last season so my son already had some friends. Normally Logan just prefers to hang with the boys, they're all wild and can shove each other around.... on this occasion he picked none other than the little blonde girl that my husband once believed to be his daughter. Seriously? What are the odds? My son doesn't normally play with girls yet on the most awkward of days he picks the "wrong" girl to become friends with! And one last bit of irony, I guess I probably did not mention that the ex that I refer to, her name is also Kristen. I know I know, odd.

So enough of that... anyone watch American Idol? This season is incredible! I just cannot choose a favorite, it changes each week! As of last night my faves are, Matt, Adam, Danny, & Allison rocked it! Kris was pretty good too... my favorite has always been Megan but she was sorta disappointing last night! Hopefully her fans pulled through for her!

Definitely excited about watching Greys tonight, I feel like finally they're going somewhere with their story line! For awhile there I was getting kinda bored! And if Addison (Private Practice) says one more time that "I'm not a cheater" I'm gonna have to reach through the tv and smack her! Come on! We all know your history!

Hopefully dinner will be an interesting one tonight, if yes they'll be pictures tomorrow, if it fails, well don't count on pictures!

thank God tomorrow is Friday!

Here's Riley and his new favorite position... also today baby boy is 6 months old!

1) Your dinner looks yummy. I have to brag though, that I made homemade sugar cookies the other day that were the bomb
2) I am totally rooting for Matt because I think he is amazing and I'm a big Allison fan also. Danny was in the lead for me in the beginning but is slacking now.
3) I want to take Riley home and spoon him. In a not gross way.
