Friday night...

last night my sis and I decided to make something new and exciting for dinner, so we came up with 2 recipes. Of course the 2 did not go well together, but they were both delicious! Here's the first one:

Bacon Cheeseburger Roll-up

1lb ground beef
4 slices bacon, chopped
1 small onion, chopped
1/2 lb (8oz) velveeta, cut into 1/2 inch cubes
1 pkg (13.8oz) refrigerated pizza crust

Heat oven to 400. Brown ground beef with bacon and onions in large skillet on medium-high heat; drain. Return mixture to skillet. Add Velveeta; cook until melted, stirring frequently. Cool 10 minutes.

Unroll dough onto baking sheet sprayed with cooking spray. Press into 15x8 inch rectangle; top with meat mixture. Roll up, starting at one of the long sides. Rearrange if necessary so roll is seam-side down.

Bake 20-25 minutes or until golden brown

Delicious!



And here's the second one:

Salmon Cakes

1pkg (6oz) stove top stuffing mix for chicken
3/4 c water
1/3 c mayo
2 cans (6oz each) salmon, drained, skin & bones discarded
1 tbsp lemon juice
1 c shredded mozz cheese
1/2 c chopped green onions

Mix all ingredients. Shape into 12 patties, using about 1/3 c of the stuffing mixture for each patty; cover. Refrigerate 1 hour.

Heat large nonstick skillet sprayed with cooking spray on medium heat. Add patties to skillet in batches.

Cook 6 minutes or until golden brown on both sides, turning carefully after 3 minutes.

Also very good! I recommend having either cocktail or tarter sauce for dipping!



And to top the night off, we waited in line at Walmart for the midnight release, and I'm now the new (and proud!) owner of Twilight!!!! Which of course I stayed up until 3 am watching it!

i have watched Twilight every day since Friday. it's very very sad that i'm this old and this in love with a fictional teenage vampire.
